The so-called “closed pizza”, the Italian calzone

The calzone is an Italian typical specialty of the South cooking. It is a distant relative of pizza, in fact it is often described as a “closed pizza”. The big dumpling of yeast-based dough contains a filling of various kinds and its ingredients discern one regional recipe from another: while the traditional one uses the classic ingredients of the Margherita, the one from Puglia has a filling of olives, onions and cheese.
